Description

This Tex-Mex Grilled Cheese recipe combines the gooey goodness of melted cheddar and Monterey Jack cheeses with the vibrant flavors of diced bell peppers, jalapeños, and red onion, all seasoned with zesty taco seasoning. Perfectly grilled to a golden brown in a skillet, this quick and easy sandwich is a delicious twist on a classic comfort food, ideal for a satisfying lunch or dinner.

Ingredients

Scale

Sandwich Ingredients

  • 4 slices of bread (white or whole wheat)
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup diced bell peppers (red or green)
  • 2 tablespoons diced jalapeños (fresh or pickled)
  • 2 tablespoons chopped red onion
  • 1 teaspoon taco seasoning
  • 2 tablespoons butter, softened

Optional for Serving

  • Sour cream
  • Salsa

Instructions

  1. Prepare the cheese and vegetable mixture: In a bowl, combine the shredded cheddar and Monterey Jack cheeses with diced bell peppers, jalapeños, chopped red onion, and taco seasoning. Mix well to evenly distribute the seasoning and vegetables within the cheese.
  2. Butter the bread slices: Spread softened butter on one side of each slice of bread. This buttered side will be the exterior that crisps up when grilled.
  3. Heat the skillet: Place a skillet over medium heat to warm. It should be hot enough to toast the bread without burning it.
  4. Assemble the sandwiches in the skillet: Place two slices of bread butter-side down on the skillet. Evenly divide the cheese and veggie mixture over these slices, then top with the remaining two slices of bread, butter-side up.
  5. Grill the sandwiches: Cook the sandwiches for approximately 3 to 4 minutes on each side, or until the bread is golden brown and crispy and the cheese inside has melted thoroughly.
  6. Slice and serve: Remove the sandwiches from the skillet, slice them diagonally or as preferred, and serve warm. Accompany with optional sour cream and salsa for added flavor.

Notes

  • Use fresh or pickled jalapeños based on your preferred heat level.
  • For a spicier kick, add extra jalapeños or sprinkle with crushed red pepper flakes.
  • Use a non-stick skillet or cast iron pan for best grilling results.
  • Whole wheat bread adds fiber and a nutty flavor but white bread works well for a classic taste.
  • Ensure the skillet isn’t too hot to prevent the bread from burning before the cheese melts.
  • Leftover filling can be used as a topping for nachos or in wraps.
