Base & Layers
- 18-20 sheets cinnamon graham crackers
- 2-3 pints vanilla ice cream
- 1 jar (12-16 oz) strawberry jam
- 1 cup sliced fresh strawberries
Instructions
- Prepare the Pan: Line or lightly grease a rectangular or square baking pan to make cake removal easier later.
- First Layer of Graham Crackers: Arrange a single layer of cinnamon graham crackers evenly across the bottom of the prepared pan to create the base of your icebox cake.
- Add Ice Cream: Evenly spread half of the vanilla ice cream over the layer of graham crackers, smoothing it out gently with a spatula to cover all crackers.
- Layer Whipped Cream and Jam: Dollop half of the prepared whipped cream on top of the ice cream layer. Then, spoon half of the strawberry jam in several places, using a knife or skewer to gently swirl it into the whipped cream for a pretty marbled effect.
- Repeat Layers: Add a second layer of graham crackers over the whipped cream and jam. Repeat spreading the remaining ice cream, followed by the rest of the whipped cream. Swirl in the remaining strawberry jam, reserving about 2 tablespoons for garnishing the top later.
- Final Graham Cracker Layer: Place a final single layer of graham crackers on top to finish the layering process.
- Chill and Freeze: Wrap the entire cake tightly with plastic wrap or aluminum foil. Freeze the cake for at least 4 hours or until it is fully hardened and set.
