Ingredients
Flatbread Base
- Pizza dough, divided into 4 pieces (homemade or store-bought)
Toppings
- Shredded rotisserie chicken, 1 to 1 ½ cups
- BBQ sauce (Sweet Baby Ray’s Sweet Vidalia Onion recommended), ½ cup
- Goat cheese, crumbled, ½ cup
- Radishes, thinly sliced, 6-8 small
- Baby arugula, 1 cup
- Balsamic vinegar, for drizzling (optional), 1-2 tablespoons
Instructions
- Heat the Grill: Preheat your grill to medium heat and set it up for indirect cooking. This will ensure that the flatbreads cook evenly without burning.
- Prepare the Dough: Divide the pizza dough into four equal pieces. Press each piece into a flatbread shape, roughly 6-8 inches in diameter.
- Grill the Dough: Place the flatbread dough on the grill over indirect heat. Cook until the underside is browned and develops grill marks, about 3-5 minutes.
- Flip and Add Toppings: Flip the flatbreads to the cooked side. Quickly spread a generous layer of BBQ sauce over each one, then top with shredded rotisserie chicken, crumbled goat cheese, and thinly sliced radishes.
- Finish Cooking: Close the grill lid and cook until the cheese melts and the bottom side is browned, approximately 3-5 minutes more.
- Add Fresh Toppings and Serve: Remove the flatbreads from the grill, top with fresh baby arugula, and drizzle with balsamic vinegar if desired. Serve immediately and enjoy!
Notes
- For best results, use a pizza stone or grill pan to prevent dough from sticking.
- If you prefer a spicier BBQ sauce, swap Sweet Baby Ray’s Sweet Vidalia Onion for your favorite spicy variety.
- You can substitute goat cheese with mozzarella or feta if preferred.
- Radishes add a fresh crunch; if unavailable, thinly sliced red onions work well too.
- To keep arugula fresh and crisp, add it just before serving.
