Description

This delicious Rotisserie Chicken BBQ Flatbread is a quick and easy recipe perfect for grilling lovers. Featuring tender shredded rotisserie chicken, tangy BBQ sauce, creamy goat cheese, and fresh radishes on a crispy grilled flatbread base, this dish combines smoky, sweet, and fresh flavors effortlessly. Topped with peppery baby arugula and a drizzle of balsamic vinegar, it makes a satisfying and vibrant meal ready in just 25 minutes.

Ingredients

Flatbread Base

  • Pizza dough, divided into 4 pieces (homemade or store-bought)

Toppings

  • Shredded rotisserie chicken, 1 to 1 ½ cups
  • BBQ sauce (Sweet Baby Ray’s Sweet Vidalia Onion recommended), ½ cup
  • Goat cheese, crumbled, ½ cup
  • Radishes, thinly sliced, 6-8 small
  • Baby arugula, 1 cup
  • Balsamic vinegar, for drizzling (optional), 1-2 tablespoons

Instructions

  1. Heat the Grill: Preheat your grill to medium heat and set it up for indirect cooking. This will ensure that the flatbreads cook evenly without burning.
  2. Prepare the Dough: Divide the pizza dough into four equal pieces. Press each piece into a flatbread shape, roughly 6-8 inches in diameter.
  3. Grill the Dough: Place the flatbread dough on the grill over indirect heat. Cook until the underside is browned and develops grill marks, about 3-5 minutes.
  4. Flip and Add Toppings: Flip the flatbreads to the cooked side. Quickly spread a generous layer of BBQ sauce over each one, then top with shredded rotisserie chicken, crumbled goat cheese, and thinly sliced radishes.
  5. Finish Cooking: Close the grill lid and cook until the cheese melts and the bottom side is browned, approximately 3-5 minutes more.
  6. Add Fresh Toppings and Serve: Remove the flatbreads from the grill, top with fresh baby arugula, and drizzle with balsamic vinegar if desired. Serve immediately and enjoy!

Notes

  • For best results, use a pizza stone or grill pan to prevent dough from sticking.
  • If you prefer a spicier BBQ sauce, swap Sweet Baby Ray’s Sweet Vidalia Onion for your favorite spicy variety.
  • You can substitute goat cheese with mozzarella or feta if preferred.
  • Radishes add a fresh crunch; if unavailable, thinly sliced red onions work well too.
  • To keep arugula fresh and crisp, add it just before serving.
