  • 1 can (14 oz) coconut milk

Instructions

  1. Sauté Onions: Heat coconut oil in a large saucepan over medium heat. Add diced onion and sauté for 3-4 minutes until softened and translucent.
  2. Add Aromatics: Stir in minced garlic and grated ginger, cooking for 1-2 minutes until fragrant to release their flavors.
  3. Toast Spices: Add ground cumin, turmeric, coriander, chili powder, and cinnamon to the pan. Cook for about 30 seconds while stirring to release the spices’ aromas.
  4. Simmer Lentils: Stir in the red lentils, water or vegetable broth, and diced tomatoes. Bring the mixture to a boil, then reduce the heat to low and simmer uncovered for 20-25 minutes, stirring occasionally, until the lentils are tender and the dahl is creamy.
  5. Finish with Coconut Milk & Salt: Pour in the coconut milk and add salt to taste. Stir everything together and simmer for an additional 5 minutes to blend the flavors.
  6. Serve: Serve the dahl hot, garnished with fresh cilantro and optional lemon wedges. It pairs beautifully with rice or naan bread for a complete meal.
