- 1 ripe peach, peeled and pitted (or 1/2 cup frozen peach slices, thawed)
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar (or white wine vinegar)
- 1 teaspoon honey or maple syrup
- 1/2 teaspoon Dijon mustard
- 1/8 teaspoon salt
- 1–2 tablespoons water (to thin, if needed)
Instructions
- Combine Ingredients: In a blender or food processor, place the peeled and pitted peach, olive oil, apple cider vinegar, honey or maple syrup, Dijon mustard, and salt.
- Blend Dressing: Blend the mixture until smooth and creamy. If the dressing is too thick, gradually add 1 to 2 tablespoons of water to achieve your desired consistency.
- Adjust Flavor: Taste the dressing and adjust seasoning by adding more vinegar for extra tang or more honey for sweetness, according to your preference.
- Store or Serve: Use the dressing immediately on your salad, or store it in a sealed jar in the refrigerator for up to 5 days.
