Ingredients
Scale
Beef and Coating
- 2 pounds beef sirloin steak, sliced into thin strips
- ¼ cup all-purpose flour
- 1 tablespoon olive oil
Pasta
- 1 pound egg noodles
Vegetables and Sauces
- 1 medium white onion, sliced
- 8 ounces mushrooms, sliced
- ¼ cup salted butter
- 3 cups beef broth
- 2 tablespoons Worcestershire sauce
- 1 cup sour cream
- 1 tablespoon Dijon mustard
- Salt and pepper, to taste
- Fresh parsley for garnish (optional)
Instructions
- Cook Noodles: Prepare the egg noodles according to the package instructions. Once cooked, drain thoroughly and set aside to keep warm.
- Coat Beef: Toss the beef sirloin strips with all-purpose flour until they are evenly coated, which will help thicken the sauce later.
- Brown Beef: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the coated beef strips and cook until browned on all sides. Remove the beef from the skillet and set aside.
- Sauté Vegetables: In the same skillet, melt the salted butter. Add sliced onions and mushrooms, sautéing them until they become soft and golden brown, about 5 to 7 minutes.
- Deglaze and Simmer: Pour in the beef broth and Worcestershire sauce, scraping the bottom of the skillet to release any browned bits. Bring the mixture to a simmer.
- Return Beef and Thicken Sauce: Add the browned beef back to the skillet. Reduce the heat and let it simmer uncovered for 10 to 15 minutes, allowing the sauce to thicken.
- Add Creaminess: Stir in the sour cream and Dijon mustard. Season with salt and pepper to taste. Continue cooking on low heat for 3 to 5 minutes while stirring, until the sauce is smooth and heated through.
- Serve: Spoon the creamy beef mixture over the cooked egg noodles. Garnish with fresh parsley if desired, and serve immediately.
Notes
- Be careful not to overcook the beef to keep it tender.
- Use fresh mushrooms for best flavor; cremini or white button mushrooms work well.
- You can substitute sour cream with Greek yogurt for a tangier but lighter version.
- For a gluten-free version, use gluten-free flour and noodles.
- Garnish with fresh parsley to add color and freshness to the dish.
