Description

A delicious fusion of Korean and American flavors, this Kimchi Grilled Cheese sandwich combines tangy, spicy kimchi with melted cheddar and mozzarella cheeses, all grilled to golden perfection on sourdough bread. Perfect for a comforting, flavorful meal with a crispy, gooey bite.

Ingredients

Scale

Bread and Butter

  • 4 slices sourdough bread
  • 2 tablespoons unsalted butter, softened

Cheese

  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese

Kimchi and Extras

  • 1/2 cup well-drained kimchi, chopped
  • 1 tablespoon mayonnaise (optional, for extra crispiness)

Instructions

  1. Prepare the Bread: Spread butter evenly over one side of each slice of sourdough bread, ensuring full coverage for a golden crust.
  2. Assemble the Sandwich: On the unbuttered side of two bread slices, layer half of the shredded cheddar and mozzarella cheese. Evenly spread chopped kimchi over the cheese, then add the remaining cheese on top. Place the remaining slices of bread on top, buttered side facing out.
  3. Add Mayonnaise (Optional): For extra crispiness, spread a thin layer of mayonnaise on the outer side of the top slice of bread.
  4. Grill the Sandwich: Heat a skillet over medium heat. Place each sandwich in the skillet and cook for 3 to 4 minutes per side, pressing slightly with a spatula, until the bread is golden brown and the cheese has melted completely.
  5. Serve: Remove the sandwiches from the skillet, slice them in half, and serve hot for the best gooey texture and flavor.

Notes

  • For a spicier kick, use spicy kimchi or add a pinch of gochugaru (Korean chili flakes) to the filling.
  • You can substitute the sourdough bread with rye or whole wheat bread based on your preference.
