Description

Joann’s Chicken Salad with Grapes is a delicious and refreshing dish combining tender shredded chicken with creamy mayonnaise, crisp celery, sweet apples, juicy grapes, and rehydrated cranberries. Perfectly seasoned and chilled, this chicken salad serves wonderfully as a sandwich filling or a snack with crackers, offering a delightful balance of textures and flavors in just 30 minutes.

Ingredients

Scale

Salad Ingredients

  • 2 cups cooked chicken breast, shredded
  • 1 ¼ cups mayonnaise
  • â…” cup celery, diced small
  • 1 medium Gala apple, peeled and diced small
  • ¾ cup small red grapes, halved
  • â…“ cup dried cranberries
  • Kosher salt, to taste
  • Freshly cracked black pepper, to taste

Serving Suggestions

  • Ritz crackers
  • White bread

Instructions

  1. Hydrate Cranberries: Place the dried cranberries in a bowl and cover them with hot water. Let them soak for 15-20 minutes to soften up. After soaking, drain the cranberries and squeeze out any excess moisture to prevent the salad from becoming too watery.
  2. Combine Ingredients: In a large mixing bowl, add the shredded cooked chicken breast, mayonnaise, diced celery, peeled and diced Gala apple, halved red grapes, and the rehydrated cranberries. Season the mixture with kosher salt and freshly cracked black pepper according to your taste. Mix everything thoroughly until well combined.
  3. Chill and Serve: Cover the bowl and refrigerate the chicken salad for at least 20 minutes to allow the flavors to thoroughly meld together. Serve the chilled chicken salad as a sandwich filling on white bread or as an accompaniment with Ritz crackers for a light and tasty meal or snack.

Notes

  • For a crunchier texture, you can add chopped walnuts or pecans.
  • If you prefer a lighter version, substitute half of the mayonnaise with Greek yogurt.
  • Make sure to peel the apple to keep the salad smooth and avoid extra texture from the peel.
  • Use freshly cooked chicken breast or leftover roasted chicken for best results.
  • Adjust the amount of mayonnaise depending on your preferred creaminess level.
