A perfect balance of heat, sweetness, and freshness makes this an easy and satisfying weeknight dinner option with gluten-free ingredients.

Ingredients

Scale

Chicken and Seasoning

  • 1 1/2 pounds boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil, divided
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Hot Honey Sauce

  • 1/3 cup honey
  • 1 to 2 tablespoons hot sauce
  • 1 tablespoon apple cider vinegar

Bowls and Toppings

  • 2 cups cooked white or brown rice
  • 1 cup corn kernels
  • 1 cup black beans, drained and rinsed
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup sliced red onion
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon lime juice

Instructions

  1. Prepare the Chicken: In a medium bowl, toss the bite-sized chicken pieces with 1 tablespoon of olive oil, paprika, garlic powder, onion powder, salt, and black pepper until every piece is well coated with the seasoning.
  2. Cook the Chicken: Heat the remaining tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken pieces to the skillet and cook for 6 to 8 minutes, stirring occasionally, until the chicken is golden brown on the outside and fully cooked through.
  3. Make the Hot Honey Sauce: While the chicken cooks, whisk together the honey, hot sauce, and apple cider vinegar in a small bowl to create a sweet and spicy glaze.
  4. Glaze the Chicken: Pour the hot honey sauce mixture over the cooked chicken in the skillet. Simmer the chicken with the sauce for 2 to 3 minutes, stirring to coat evenly, until the sauce thickens slightly and forms a glossy glaze on the chicken.
  5. Assemble the Bowls: Evenly divide the cooked rice into serving bowls. Top each bowl with the hot honey chicken, corn kernels, black beans, sliced avocado, halved cherry tomatoes, and red onion slices.
  6. Garnish and Serve: Drizzle each bowl with lime juice and sprinkle with chopped fresh cilantro for a bright, fresh finish. Serve immediately while warm.

Notes

  • Adjust the heat level by adding more or less hot sauce according to your spice preference.
  • For a low-carb alternative, swap the rice for cauliflower rice to reduce carbohydrates.
  • Add shredded lettuce or a dollop of sour cream to the bowls for extra texture and creamy flavor contrast.
