Instructions

  1. Prepare the base mixture: Line a baking sheet or large platter with wax or parchment paper to prevent sticking. In a large mixing bowl, combine the diced strawberries, vanilla Greek yogurt, and honey or maple syrup, stirring well until evenly mixed.
  2. Shape the clusters: Using a spoon, drop dollops of the strawberry yogurt mixture onto the prepared baking sheet. Gently spread each dollop into a patty shape to form clusters.
  3. Freeze the clusters: Place the baking sheet in the freezer and freeze the clusters for at least three hours or overnight, until they are fully frozen and firm to touch.
  4. Melt the chocolate coating: Carefully melt the chocolate chips using either a microwave in short bursts, stirring frequently, or a double boiler on the stovetop. For a smoother coating, stir the optional coconut oil into the melted chocolate until well combined.
