Instructions

  1. Prepare the Marinade: In a large bowl, whisk together olive oil, lemon juice, smashed garlic, oregano, kosher salt, and black pepper until well combined.
  2. Marinate the Chicken: Add the chicken pieces to the marinade and toss to coat thoroughly. Cover and refrigerate for at least 30 minutes, or up to 24 hours for deeper flavor infusion.
  3. Make the Tzatziki Sauce: While the chicken marinates, combine Greek yogurt, chopped cucumber, lemon juice, minced garlic, freshly chopped dill, salt, pepper, and red pepper flakes in a bowl. Stir well and refrigerate until ready to serve.
  4. Prepare the Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during grilling.
