Ingredients
Scale
Potatoes
- 1 ½ pounds baby gold potatoes, scrubbed and dried
Seasoning
- 2 tablespoons extra virgin olive oil
- ¾ teaspoon kosher salt, divided
- ¼ teaspoon ground black pepper
- 6 cloves garlic, minced
- Chopped fresh chives or parsley, for serving (optional)
Instructions
- Preheat and Prep: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ease clean up.
- Cut and Season Potatoes: Cut the baby gold potatoes in halves or quarters depending on size. Toss them thoroughly in a bowl with 2 tablespoons of extra virgin olive oil, ½ teaspoon of kosher salt, and ¼ teaspoon of ground black pepper to ensure even seasoning.
- Roast: Arrange the potatoes cut-side down on the prepared baking sheet in a single layer to promote even browning. Roast in the preheated oven for 35 minutes until they start developing a golden crust.
- Add Garlic: Remove the baking sheet and sprinkle the minced garlic evenly over the potatoes. Toss the potatoes gently to coat the garlic and redistribute them in an even layer. Rotate the pan for even cooking and continue to roast for an additional 5 to 10 minutes until the potatoes are deeply golden and crispy.
- Season and Serve: Toss the roasted potatoes once more with the remaining ¼ teaspoon of salt and chopped fresh chives or parsley if desired. Allow the potatoes to cool slightly before serving hot for best flavor and texture.
Notes
- For extra crispiness, ensure potatoes are spread in a single layer without overcrowding.
- Baby gold potatoes can be substituted with small red or Yukon gold potatoes for a different flavor profile.
- Fresh garlic is added near the end to prevent burning and maintain its robust flavor.
- Leftover roasted potatoes can be reheated in the oven or air fryer for best texture retention.
- Adjust salt according to your dietary preferences.
