  • 4 cloves garlic, minced

  • ½ tsp kosher salt
  • ½ tsp ground pepper
  • 1 tbsp olive oil

Steak and Butter

  • 1½ lbs. sirloin steak, cut into 1-inch cubes (alternatives: beef tenderloin, NY strip steak, or stir fry meat)
  • 4 tbsp unsalted butter, divided (½ stick)
  • Freshly chopped parsley, optional for garnish


Instructions

  1. Heat the skillet and melt butter: Place a cast iron skillet over medium-high heat. Add the olive oil and 2 tablespoons of the butter. Let the butter melt completely and start to sizzle, creating the perfect base for cooking.
  2. Cook the potatoes with seasonings: Add the diced potatoes, minced garlic, dried rosemary, dried oregano, kosher salt, and ground pepper to the skillet. Cook the potatoes for about 4 minutes without stirring to develop a crispy exterior. Then stir and continue cooking for another 3–4 minutes until fork tender. Once cooked, remove the potatoes from the skillet and set aside.
  3. Sear the steak bites: Increase the heat to high. Add the remaining 2 tablespoons of butter to the skillet and stir until melted. Add the steak cubes in a single layer and cook for 1 minute undisturbed to get a good sear. Flip or stir the steak and cook for an additional 1–2 minutes or until desired doneness. Remove skillet from heat.
  4. Toss potatoes and steak together: Return the cooked potatoes to the skillet with the steak bites. Gently toss everything to combine and heat through evenly. Adjust seasoning by adding more salt or pepper if desired.
