Ingredients
Scale
Potatoes and Seasoning
- 1 lb. Yukon Gold potatoes, diced into ½-inch cubes (or red-skinned or fingerling potatoes)
- 4 cloves garlic, minced
- 1 tsp dried rosemary
- 1 tsp dried oregano
- ½ tsp kosher salt
- ½ tsp ground pepper
- 1 tbsp olive oil
Steak and Butter
- 1½ lbs. sirloin steak, cut into 1-inch cubes (alternatives: beef tenderloin, NY strip steak, or stir fry meat)
- 4 tbsp unsalted butter, divided (½ stick)
- Freshly chopped parsley, optional for garnish
Instructions
- Heat the skillet and melt butter: Place a cast iron skillet over medium-high heat. Add the olive oil and 2 tablespoons of the butter. Let the butter melt completely and start to sizzle, creating the perfect base for cooking.
- Cook the potatoes with seasonings: Add the diced potatoes, minced garlic, dried rosemary, dried oregano, kosher salt, and ground pepper to the skillet. Cook the potatoes for about 4 minutes without stirring to develop a crispy exterior. Then stir and continue cooking for another 3–4 minutes until fork tender. Once cooked, remove the potatoes from the skillet and set aside.
- Sear the steak bites: Increase the heat to high. Add the remaining 2 tablespoons of butter to the skillet and stir until melted. Add the steak cubes in a single layer and cook for 1 minute undisturbed to get a good sear. Flip or stir the steak and cook for an additional 1–2 minutes or until desired doneness. Remove skillet from heat.
- Toss potatoes and steak together: Return the cooked potatoes to the skillet with the steak bites. Gently toss everything to combine and heat through evenly. Adjust seasoning by adding more salt or pepper if desired.
- Garnish and serve: Sprinkle freshly chopped parsley over the dish for color and freshness if using. Serve immediately and enjoy your garlic butter steak bites with crispy potatoes!
Notes
- Use a cast iron skillet for the best sear on the steak and crispy potatoes.
- Do not stir the potatoes during the first 4 minutes to allow them to develop a nice crust.
- Alternatives to sirloin steak include beef tenderloin, NY strip steak, or pre-cut stir fry meat.
- Adjust cooking times slightly based on steak cube size and preferred doneness.
- Fresh parsley is optional but adds a lovely fresh flavor and presentation.
- This recipe can easily be doubled for more servings.
