Description

This Easy Spinach and Cottage Cheese Breakfast Casserole is a nutritious and delicious dish perfect for a healthy breakfast or brunch. Packed with protein-rich eggs, creamy cottage cheese, and fresh spinach, it’s a flavorful baked casserole that’s simple to prepare and satisfying to eat.

Ingredients

Scale

Vegetables

  • 2 cups fresh spinach, chopped
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 2 cloves garlic, minced

Dairy

  • 1 1/2 cups cottage cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup milk

Other

  • 8 large eggs
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat and Prepare: Preheat your oven to 375°F. Lightly grease a 9×9-inch baking dish to prevent sticking and set it aside.
  2. Sauté Vegetables: Heat the olive oil in a skillet over medium heat. Add the diced onion and bell pepper, sautéing them for 3 to 4 minutes until they soften. Then stir in the minced garlic and chopped spinach, cooking for another 1 to 2 minutes until the spinach wilts. Remove from heat and allow to cool slightly.
  3. Mix Ingredients: In a large bowl, whisk together the eggs, cottage cheese, shredded mozzarella, grated Parmesan, milk, salt, black pepper, and optional red pepper flakes until smooth and well combined. Gently fold in the sautéed vegetables.
  4. Assemble Casserole: Pour the combined mixture into the prepared baking dish, spreading it out evenly to ensure uniform cooking.
  5. Bake: Place the baking dish in the preheated oven and bake for 30 to 35 minutes or until the center is set and the top turns lightly golden brown.
  6. Cool and Serve: Remove the casserole from the oven and let it cool for 5 to 10 minutes. Slice into portions and serve warm.

Notes

  • For a tangier flavor, you can substitute feta cheese for mozzarella.
  • Add cooked bacon or sausage for an extra protein boost.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Reheat leftovers gently in the microwave or oven before serving.
