Ingredients
Scale
Meat and Vegetables
- 1 pound ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 1/2 cups frozen mixed vegetables
Sauce
- 3 tablespoons cornstarch
- 1/2 cup dry red wine
- 1 (14-ounce) can beef broth
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon Herbes de Provence
- 1 teaspoon Worcestershire sauce
Mashed Potatoes
- 5 cups diced potatoes, peeled and boiled until fork tender
- 4 tablespoons butter
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 3/4 teaspoon garlic powder
- 1/4 cup milk
- Paprika, for sprinkling
Instructions
- Brown beef and sauté vegetables: Preheat a skillet over medium heat. Brown the ground beef until fully cooked, then drain any excess grease. Add the diced onion, minced garlic, and frozen mixed vegetables to the skillet and sauté for 10 minutes until the vegetables are tender.
- Make sauce: Sprinkle cornstarch into the skillet and stir well to combine. Pour in the dry red wine, beef broth, and add salt, pepper, Herbes de Provence, and Worcestershire sauce. Bring the mixture to a simmer and cook for about 10 minutes until the sauce thickens.
- Make mashed potatoes: While the beef mixture simmers, mash the boiled potatoes in a large bowl. Add butter, salt, pepper, garlic powder, and milk to the potatoes and mix until smooth and creamy.
- Assemble and bake: Preheat your oven to 350°F (175°C). Transfer the beef and vegetable mixture to an oven-safe baking dish. Evenly spread the mashed potatoes over the top. Use a fork to create a textured pattern on the mashed potatoes and sprinkle with paprika for color and flavor. Bake for 20-25 minutes until the top is bubbly and golden brown.
- Serve hot: Remove the shepherd’s pie from the oven and let it cool slightly before serving hot.
Notes
- For extra creaminess in mashed potatoes, use heavy cream in place of milk.
- You can substitute ground lamb for beef to create a more traditional shepherd’s pie.
- If you prefer a thicker sauce, add an extra tablespoon of cornstarch mixed with cold water before simmering.
- Leftovers store well in the refrigerator for up to 3 days; reheat covered in the oven.
- For a gluten-free version, ensure the beef broth and Worcestershire sauce are gluten-free.
