Description

These Chocolate Raspberry Mousse Bites are decadent, bite-sized treats featuring a smooth chocolate mousse center with a surprise raspberry jam filling, all coated in rich melted chocolate. Perfect as elegant party snacks or a delightful dessert, they combine creamy texture with a burst of fruity sweetness, decorated with edible glitter or rose petals for a stunning presentation.

Ingredients

Scale

For the Mousse Filling:

  • 1 cup heavy cream
  • 1/2 cup chocolate chips (milk or dark, depending on preference)
  • 1 teaspoon vanilla extract
  • 1/4 cup powdered sugar

For the Raspberry Filling:

  • 1/2 cup raspberry jam or preserves

For the Chocolate Coating:

  • 1 1/2 cups melted chocolate chips (for coating)
  • 1 tablespoon coconut oil (optional, for a smoother coating)

For Toppings (Optional):

  • Dried rose petals
  • Edible glitter or sugar sprinkles
  • Extra melted chocolate for drizzling

Instructions

  1. Make the Chocolate Mousse: In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring in between, until fully melted. Set aside to cool slightly.
  2. Whip Cream: In a separate bowl, whip the heavy cream and powdered sugar until soft peaks form.
  3. Combine Ingredients: Gently fold the melted chocolate and vanilla extract into the whipped cream until fully combined and fluffy. Refrigerate the mousse for 30 minutes to firm up.
  4. Shape Mousse Bites: Take small spoonfuls of the chocolate mousse and form them into small bite-sized discs using a mini silicone mold or by hand.
  5. Add Raspberry Filling and Freeze: Place a small amount of raspberry jam in the center of each mousse disc. Press the top gently to secure the jam. Repeat for all portions, then freeze the bites for at least 1 hour.
  6. Melt Chocolate for Coating: Melt the chocolate chips with coconut oil (if using) in a microwave-safe bowl until smooth.
  7. Coat the Frozen Mousse Bites: Remove the mousse bites from the freezer. Using a fork or dipping tool, dip each frozen bite into the melted chocolate, ensuring full coverage. Let excess chocolate drip off, then place on a parchment-lined tray.
  8. Decorate: While the chocolate coating is still wet, sprinkle with dried rose petals, edible glitter, or sugar sprinkles. Optionally drizzle extra melted chocolate on top for decoration.
  9. Set and Serve: Allow the coated bites to set completely at room temperature or refrigerate for about 15 minutes before serving.

Notes

  • Use dark chocolate chips for a richer flavor or milk chocolate for a sweeter taste.
  • The coconut oil helps achieve a smoother, glossier chocolate coating but can be omitted.
  • Freeze bites thoroughly before coating to prevent melting.
  • Store finished mousse bites in the refrigerator in an airtight container for up to 3 days.
  • For a dairy-free version, substitute heavy cream with coconut cream and use dairy-free chocolate chips.
