- 2 cups finely diced cooked chicken
- 1/4 cup finely diced celery (1 rib)
- 1/4 cup finely diced red onion
- 2 tablespoons finely chopped fresh parsley (or cilantro)
- 1 large ripe avocado (divided)
Dressing
- 3 tablespoons mashed avocado (from the whole avocado)
- 1 tablespoon lemon juice
- 1/3 cup mayonnaise (plus more as needed)
- 1 teaspoon Dijon-style mustard
- 1 teaspoon olive oil
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Make Dressing: Halve and pit the avocado. Mash 3 tablespoons of the avocado and add it to a large bowl. Dice the remaining avocado and set it aside. Add lemon juice, mayonnaise, Dijon mustard, olive oil, garlic powder, salt, and pepper to the mashed avocado in the bowl. Whisk all the ingredients together until smooth and well combined.
- Make Chicken Salad: Add the finely diced cooked chicken, celery, red onion, chopped parsley, and the reserved diced avocado to the bowl with the dressing. Gently stir everything together to combine evenly without mashing the avocado pieces.
- Adjust Seasoning: Taste the mixture and season with additional salt and pepper if needed. If the salad seems dry, add 1 to 4 tablespoons more mayonnaise to reach your desired consistency.
