Cauliflower Patties
- 1 medium head cauliflower, cut into florets (about 4 cups)
- 2 large eggs, lightly beaten
- 1/2 cup grated Parmesan cheese
- 1/3 cup breadcrumbs
- 2 tablespoons finely chopped green onions
- 2 tablespoons chopped fresh parsley
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 2 tablespoons olive oil, for frying

- Cook Cauliflower: Bring a large pot of salted water to a boil and cook the cauliflower florets for 8 to 10 minutes until fork tender. Drain well and let cool slightly.
- Drain Excess Moisture: Transfer the cooked cauliflower to a clean kitchen towel and squeeze out as much excess moisture as possible to ensure the patties hold together well.
- Prepare Cauliflower Mixture: Finely chop the cauliflower by hand or pulse briefly in a food processor until crumbly but not pureed. In a large bowl, combine the cauliflower, beaten eggs, Parmesan cheese, breadcrumbs, green onions, parsley, garlic, salt, pepper, and paprika. Mix thoroughly until well combined.
- Form Patties: Shape the mixture into small patties about 1/2 inch thick, making approximately 8 patties.
- Heat Oil: Heat the olive oil in a large skillet over medium heat until shimmering.
- Cook Patties: Fry the patties in batches for 3 to 4 minutes per side, until golden brown and crisp on both sides.
- Drain and Serve: Transfer cooked patties to a paper towel-lined plate to drain excess oil. Serve warm with a dollop of plain Greek yogurt if desired.
