Description

Delight in these rich and decadent Buckeye Brownies, featuring a fudgy chocolate base topped with a creamy peanut butter layer and finished with a luscious chocolate ganache. This layered dessert combines the classic flavors of chocolate and peanut butter into an irresistible treat perfect for any occasion.

Ingredients

Scale

Brownie Base

  • 1 box (18.3 oz) fudge brownie mix (plus eggs, oil, and water as called for on the box)

Peanut Butter Layer

  • 1 cup creamy peanut butter
  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tablespoons milk

Chocolate Ganache

  • 1½ cups semi-sweet chocolate chips
  • ¾ cup heavy cream

Instructions

  1. Prepare the Brownies: Preheat the oven to 350°F. Prepare the brownie mix according to the package instructions using the called-for eggs, oil, and water. Pour the batter into a greased 9×13-inch baking dish and bake for 25–30 minutes, or until a toothpick inserted near the center comes out with moist crumbs. Remove from the oven and let the brownies cool completely.
  2. Make the Peanut Butter Layer: In a medium bowl, beat together the creamy peanut butter and softened unsalted butter until smooth and well combined. Gradually add the powdered sugar and milk, mixing until the mixture is creamy and spreadable. Spread this peanut butter layer evenly over the completely cooled brownies. Place the pan in the refrigerator and chill for 20 minutes to set.
  3. Prepare the Chocolate Ganache: While the peanut butter layer chills, heat the heavy cream in a small saucepan over medium heat until it just begins to simmer. Remove from heat and add the semi-sweet chocolate chips. Let them sit for 2–3 minutes to soften, then stir until the ganache is smooth and glossy.
  4. Assemble and Chill: Pour the chocolate ganache over the peanut butter layer, spreading it evenly across the surface. Refrigerate the brownies for at least 1 hour to allow the ganache to set completely before slicing and serving.

Notes

  • For added texture, use crunchy peanut butter instead of creamy.
  • These brownies are best stored in the refrigerator and served slightly chilled for optimal flavor and texture.
