- 1 (8-ounce) can thin crust refrigerated pizza dough
- 1 (8-ounce) can thin crust refrigerated pizza dough (for rolling)
Filling
- 1 pound pork breakfast sausage, cooked, crumbled, and well drained (or substitute turkey sausage)
- 8 large eggs, softly scrambled
- 2 cups shredded Colby Jack cheese (or cheddar cheese, plus a few tablespoons reserved for topping)
Instructions
- Preheat Oven and Prepare Dough: Preheat your oven to 375°F (190°C) and line a large baking sheet with parchment paper. Open one can of the refrigerated pizza dough and stretch it thin and even on the parchment paper to form the base.
- Add Filling: Spread the soft scrambled eggs evenly over the stretched dough, leaving about a 3-inch border around the edges free of eggs. Evenly sprinkle the cooked and drained sausage over the eggs followed by the shredded cheese, reserving a few tablespoons for topping later.
- Roll the Stromboli: Starting at one side, carefully roll the dough like a jelly roll, using the parchment paper to help lift and roll it over. Once rolled, slide the stromboli to the middle of the parchment with the seam side down. Stretch and tuck the ends underneath to seal. Cut several diagonal slits into the crust for steam ventilation. Sprinkle the reserved cheese over the top of the stromboli.
- Bake: Place the stromboli in the preheated oven and bake for 20 to 30 minutes, or until the crust is golden brown and cooked through.
- Serve: Remove from oven and let cool slightly. Serve warm on its own or with optional sides such as sausage gravy, salsa, or marinara sauce for dipping.
