Instructions

  1. Make the Blueberry Compote: In a small saucepan over medium heat, combine the blueberries, honey or maple syrup, and lemon juice. Simmer for about 5 minutes, stirring occasionally, until the blueberries soften and start to break down. If a thicker compote is desired, dissolve the cornstarch in 1 tablespoon of water and stir it into the simmering mixture. Let the compote cool completely before using.
  2. Prepare the Yogurt Base: In a mixing bowl, whisk together the Greek yogurt and vanilla extract until smooth and creamy. Taste the mixture and add extra honey or maple syrup if a sweeter flavor is preferred.
  3. Fill the Molds: Spoon the yogurt mixture into silicone molds or a mini muffin tin, filling each cavity about three-quarters full to leave room for the blueberry swirl.
  4. Add the Blueberry Swirl: Place a small spoonful of the cooled blueberry compote on top of each yogurt-filled mold. Use a toothpick or skewer to gently swirl the compote into the yogurt, creating a marbled, artistic effect.
