Brisket Filling
- 2 cups cooked beef brisket (shredded or sliced thin)
- 1/2 cup barbecue sauce
- 1 tablespoon olive oil
- 1 small red onion (thinly sliced)
Sandwich Assembly
- 4 slices provolone cheese
- 4 slices sharp cheddar cheese
- 4 sandwich rolls or hoagie buns (split)
- 2 tablespoons butter (softened)
- Optional: pickles or jalapeños for topping
Instructions
- Sauté the onion: Heat olive oil in a skillet over medium heat. Add the thinly sliced red onion and cook for about 5 minutes until softened and fragrant.
- Add brisket and barbecue sauce: Stir in the shredded brisket and barbecue sauce, combining well. Continue cooking for another 3 to 4 minutes until the mixture is heated through.
- Toast the rolls: While the brisket mixture warms, spread softened butter on the inside of each sandwich roll. Toast them lightly in a separate skillet over medium heat or under the broiler until golden brown and slightly crisp.
- Assemble sandwiches: Place one slice of provolone and one slice of sharp cheddar cheese inside each toasted roll. Spoon an even amount of the hot brisket mixture over the cheese. Add optional pickles or jalapeños as desired.
- Melt the cheese and heat through: Close the sandwiches and return them to the skillet or use a panini press. Cook until the cheese is fully melted and the sandwiches are heated through, approximately 3 to 5 minutes.
